Ingredients
For The Dough
1 cup plain flour (maida)
1 cup whole wheat flour (gehun ka atta)
1 tbsp ghee
salt to taste
To Be Ground Into A Smooth Paste
2 tbsp roughly chopped green chillies
1/4 cup chopped coriander (dhania)
1 tsp chopped ginger (adrak)
3 tbsp water
For The Stuffing
2 tbsp ghee
1 tsp cumin seeds (jeera)
2 cups finely chopped carrot
1 cup finely chopped cauliflower
1 cup finely chopped potatoes
1 cup green peas
1 tsp finely chopped green chillies
salt to taste
1/2 cup grated processed cheese
2 tbsp chopped coriander (dhania)
Other Ingredients
whole wheat flour (gehun ka atta) for rolling
ghee for cooking
Method
For the dough
- To make a dough, in a bowl put plain flour, whole wheat flour, ghee, salt to taste and enough water to make a semi-soft dough.
- Mix well and knead into a semi-soft dough.
- Cover with a lid and keep aside for 15 minutes.
- Divide the dough into 14 equal portions.
To be ground into a smooth paste
- In a mixer jar or mortar add green chillies, coriander, ginger, 3 tablespoons water.
- Grind to a smooth paste or pound using a pestle and keep aside.
For the stuffing
- Heat the ghee in a broad non-stick pan, add the cumin seeds and sauté on a medium flame for a few seconds.
- Add the carrots, cauliflower, potatoes , green peas, green chillies, prepared paste and salt, mix well.
- Cover and cook on a medium flame for 10 minutes, while stirring occasionally.
- Switch off the flame, and mash the vegetables coarsely using a potato masher. Cool.
- Add the cheese, coriander and mix well.
- Divide the stuffing into 7 equal portions and keep aside.
How to proceed
- Roll out 2 portions of the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.
- Place a rolled circle on a clean, dry surface, spread one portion of the stuffing evenly over it. Cover it with another rolled circle and press it gently to seal the edges.
- Heat a non-stick tava (griddle) and cook the paratha, using a little ghee , till it turns golden brown in colour from both the sides.
- Serve paratha stuffed with vegetables and cheese immediately.

Parathas with vegetables and cheese, was a great hit among my kids, as they loved the cheesy taste of the parathas, at the same time eating healthy vegetables.
