gajar ka halwa recipe has a traditional charm that continues to please every generation of Indians! Here is a quick gajar ka halwa recipe made using the pressure cooker.

Cooked in milk, the carrots acquire a rich taste and melt-in-the-mouth texture, which are intensified by the addition of mava. Because milk and mawa are used, the quick gajar ka halwa recipe does not require much ghee, yet it has the same old rich taste and luxuriant mouth-feel.

To make quick gajar ka halwa recipe, we have cooked grated carrot in ghee and milk in the pressure cooker until one whistle. Pressure cooking cuts the time into half and making carrots cook quicker. Further, we have transferred the cooked gajar to a non-stick pan, we have added sugar. Sometimes condensed milk is also added for a rich, creamy texture. If using that, skip adding sugar or add part sugar, part condensed milk to carrot halwa. Mix well and cook till gets to the halwa consistency. Add mawa to make instant gajar ka halwa rich. Do not add more khoya than the mentioned quantity. It makes the halwa sticky. Instead of khoya, you can add milk powder or almond meal for that extra richness. Mix well and add raisins and almond. Add cardamom. Cook and our gajar ka halwa is ready to be relished!!

For gajar ka halwa
 

  1. To make gajar ka halwa, heat the ghee in a pressure cooker, add the carrots and sauté on a medium flame for 4 to 5 minutes, while stirring continuously.
  2. Add the milk, mix well and pressure cook for 1 whistle.
  3. Allow the steam to escape before opening the lid.
  4. Transfer into a broad non-stick pan, add the sugar, mix well and cook on a high flame for 5 to 7 minutes, while stirring continuously.
  5. Add the mawa, mix well and cook for more 1 to 2 minutes, while stirring continuously.
  6. Add the raisins, almonds and cardamom powder and cook for another 1 minute.
  7. Serve the gajar ka halwa hot or warm.

How to make Gajar Ka Halwa

 

    1. Before we begin making the quick gajar ka halwa recipe | gajar ka halwa recipe | gajar ka halwa in pressure cooker | clean and wash the carrots. Make use of tender, juicy, firm red carrots to get that naturally sweet gajar ka halwa.
    2. Peel it using a scraper and discard the skin. To get 2 cups of grated carrot we have used 4 medium-sized carrots.
    3. Grate the carrots using a box grater. You can use the shredding disc on your food processor but do not grind the carrots in a blender. Keep aside.
    4. To make gajar ka halwa in a pressure cooker, heat the ghee in a pressure cooker. Ghee imparts a wonderful flavor to the gajar halwa.
    5. Add the carrots.
    6. Sauté on a medium flame for 4 to 5 minutes, while stirring continuously.
    7. Add milk. If you want to make this dairy-free and vegan, you can use full-fat coconut milk and coconut oil instead of ghee but it sure won’t taste that good. Check out this recipe to make Low Fat Carrot Halwa.
    8. Mix well. Traditionally, gajar ka halwa is made in a thick kadhai by reducing the milk and involved quite a bit of stirring to ensure the gajar halwa cooks evenly and didn’t stick to the bottom of the pan.
    9. Pressure cook gajrela for 1 whistle. Allow the steam to escape before opening the lid. Pressure-cooking helps in cooking the carrots quickly.
    10. Transfer carrot halwa into a broad non-stick pan. It looks slightly gooey with little milk at this stage.
    11. Add sugar. You can add more or less sugar as per the sweetness you prefer. Sometimes condensed milk is also added for a rich, creamy texture. If using that, skip adding sugar or add part sugar, part condensed milk to carrot halwa.
    12. Mix well and cook on a high flame for 5 to 7 minutes, while stirring continuously. Cook till all the moisture evaporates and it becomes halwa consistency.
    13. Add mawa to make instant gajar ka halwa rich. Do not add more khoya than the mentioned quantity. It makes the halwa sticky. Instead of khoya, you can add milk powder or almond meal for that extra richness. Learn Khoya at home.
    14. Mix well and cook for more 1 to 2 minutes, while stirring continuously.
    15. Add raisins. Other dried fruits like cashew nuts, pistachios can also be added.
    16. Add almonds. If you like crunchy nuts, then roast the raisins till they puff up and almonds till they are brown in ghee before you start making the gajar halwa and remove them.
    17. Add cardamom powder to enhance the flavor and make carrot pudding aromatic.
    18. Cook the gajar halwa for another 1 minute. Our carrot halwa with khoya in the pressure cooker is now ready!
