To make eggless chocolate fudge cake, grease a 150 mm (6”) diameter baking tin with butter and keep aside. Preheat the oven to 180°c. In a small bowl, mix curd, baking soda and baking powder. Keep it aside. Put a sieve over a bowl and sieve the plain flour and cocoa power together with the help of a spoon.Take a large bowl and put the melted butter, powdered sugar, curd mixture, vanilla essence and plain flour- cocoa powder mixture.
Mix well with the help of a spatula. Add the chopped walnuts and mix well. Pour this mixture into the greased baking tin. Bake at 180 c for 40 to 45 minutes. Demould the cake and place it upside down on a plate. Let the eggless chocolate fudge cake cool down completely. To make the icing, mix the cocoa powder, corn flour and water to make a thick paste. Make the icing after the cake has cooled as the icing hardens quickly. Pour over the chocolate fudge cake and decorate with walnuts.

Ingredients
For Eggless Chocolate Fudge Cake
1 cup plain flour (maida)
1/4 cup cocoa powder
3/4 cup powdered sugar
1/2 tsp baking soda
1/2 tsp baking powder
6 tbsp curd (dahi)
5 tbsp milk
5 tbsp melted butter
1/2 cup chopped walnuts (akhrot)
1/2 tsp vanilla essence
butter to grease the ring mould
walnuts (akhrot) for decoration
For Eggless Chocolate Fudge Cake Icing
1/2 cup icing sugar
4 tbsp cocoa powder
3 to 4 tbsp water
Method
- Grease a 150 mm (6”) diameter ring mould with butter and keep aside.
- Preheat the oven to 180°c (360°f).
- In a small bowl, mix curd, baking soda and baking powder. Keep it aside.
- Put a sieve over a bowl and sieve the plain flour and cocoa power together with the help of a spoon.
- Take a large bowl and put the melted butter, powdered sugar, curd mixture, vanilla essence, plain flour-cocoa powder mixture and milk. Mix well with the help of a spatula.
- Add the chopped walnuts and mix well. Pour this mixture into the greased ring mould.
- Bake at 180°c (360°f) for 40 to 45 minutes.
- Demould the cake and place it upside down on a plate. Let the cake cool down completely.
- To make the icing, mix the cocoa powder, icing sugar and water to make a thick paste. Make the icing after the cake has cooled as the icing hardens quickly.
- Pour the icing over the eggless chocolate fudge cake and decorate with walnuts.
- Serve the eggless chocolate fudge cake immediately.

To make the eggless chocolate fudge cake recipe | Indian style easy chocolate fudge cake | first grease a 150 mm (6”) diameter baking tin with butter and keep it aside.
- Preheat your oven at 180°C while you make the batter. If you do not preheat your oven the cake will not rise well and you will not be able to estimate the duration of baking.

To make the batter of the Chocolate Fudge Cake, first take a small bowl and put the curd into it.

Next, add the baking soda.

Also, add the baking powder.
- Mix all these ingredients well and keep it aside. You will notice that the mixture becomes frothy. This mixture is the raising agent for our Eggless Chocolate Fudge Cake. Do not over mix the ingredients as it will weaken the raising power.
- Now, take a deep bowl and place a sieve over it.

Put the plain flour into the bowl with sieve.

Also, put the cocoa powder.

Push the flour down with the help of a spoon. Sieving the flour aerates it and makes the cake fluffier.

Now, take a large and wide mouthed bowl and add the butter into it.

Add the powdered sugar to sweeten the cake. We have used powdered sugar because it melts easily.

Also, add the curd mixture.

Add vanilla essence to enhance the flavour of the Eggless Chocolate Fudge Cake.
- Add the dry ingredients into the bowl.

Add the chopped walnuts and mix well.

Mix well with the help of a spatula. Do not over mix to prevent the cake from becoming dense.

Pour the batter of the eggless chocolate fudge cake | Indian style easy chocolate fudge cake | into the greased baking tin.

Bake at 180 ° C for 40-45 minutes. The Eggless Chocolate Fudge Cake is ready when it leaves the sides of the tin and is spongy to touch. You can also check the doneness using a knife. Insert the cknife into the cake. The Chocolate Fudge Cake is ready if it comes out clean.

Loosen the edges of the cake and tap the mould sharply in an upside down position on a plate. Keep the Eggless Chocolate Fudge Cake aside to cool.

Add not more than 3 to 4 tbsp of water into the bowl.

Mix well with the help of a spoon till no lumps remain and a thick paste is formed. Since the icing hardens quickly, make it only after the Eggless Chocolate Fudge Cake has cooled.

Pour this icing generously over the cooled Eggless Chocolate Fudge Cake.

Garnish with a few walnuts and serve the Eggless Chocolate Fudge Cake immediately.

Hi Smiti, you need to use icing sugar for icing the cake, powdered sugar will give you crunchy feeling as it wont dissolve properly.

Hi Priyanka, this can happen since its baked in a microwave. We have used convection oven to bake this recipe. Try baking it in a convection oven to get better results.
