Ingredients
Rice and Palak Appe
3/4 cup rajgira (amaranth) flour
2 tbsp besan (Bengal gram flour)
1/4 cup soaked and cooked rice (chawal)
3 tbsp low fat curds (dahi)
1/4 cup grated bottle gourd (doodhi / lauki)
1/2 cup finely shredded spinach (palak) , washed and drained
1/4 tsp turmeric powder (haldi)
1 tbsp ginger-green chilli paste
a pinch asafoetida (hing)
1 tbsp sesame seeds (til)
1/4 tsp salt or as advised by doctor / dietitian
3 tsp oil for cooking
Method
Rice and palak appe
- To make rice and palak appe recipe, combine all the ingredients in a bowl and add 1/2 cup of water to make a thick batter.
- Cover with a lid and keep aside for 30 to 40 minutes.
- Heat and grease the appe mould using ½ tsp oil. Pour a spoonful of the batter into a hot appe mould.
- Cover and cook on a medium flame for 1 to 2 minutes.
- Gently turn each appe using a knife or a wooden toothpick. Apply ½ tsp oil on all the appes and cook on a medium flame on both the sides until light golden brown and crispy.
- Repeat steps 3 and 4 to make appes using remaining batter.
- Serve rice and palak appe hot.
