Method

  1. Heat the oil in broad non-stick pan, add the garlic and sauté on a medium flame for few seconds.
  2. Add the onions and sauté on a medium flame for 1 minute.
  3. Add the tomatoes and 2 tbsp water and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Add the capsicum, rajma, chilli powder, cumin seeds powder, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Use as required.

This is an extremely healthy version of Rajma and is used as a tasty base for filling tortillas with guacamole. Great to have for dinner and my source of protein. The capsicum in this recipe helps to lower the blood glucose level.
