What makes this upvas ka paratha very appealing is that the rotis are made of a dough of rajgira flour and potatoes, which gives these gluten free paratha a unique texture that is soft yet crisp.

Rajgira flour combines beautifully with potatoes in these peppery rajgira roti. The potatoes ensure that the parathas remain soft. Serve these parathas with spicy green chutney and curd.

Tips to make rajgira paratha: 1. Add water to knead dough gradually, as even a slightly soft dough might make rolling difficult. 2. Rolling semi-soft rajgira dough is also slightly difficult. It needs a little practice. We suggest you roll with a thin rolling pin and with light pressure. 3. Is it possible to make rajgira roti without the potatoes? No it wont be possible, as it needs potatoes to bind. You can use any other starch vegetables.

For rajgira paratha
 

  1. To make rajgira paratha recipe, combine the rajgira flour, potatoes, pepper powder and salt in a bowl and knead into semi-soft dough using enough water.
  2. Divide the dough into 4 equal portions and roll out a portion into a circle of 150 mm (6”) diameter, using a little rajgira flour for rolling.
  3. Heat a non-stick tava (griddle) and cook the paratha, using a little oil, till it turns golden brown in colour from both sides.
  4. Serve the rajgira paratha immediately with green chutney and fresh curds.

what is rajgira paratha made of ?

 

    1. what is rajgira paratha made of ? rajgira roti is made from 1 cup rajgira flour (cholai/ramdaana), 1/4 cup boiled , peeled and mashed potatoes, 2 tbsp finely chopped coriander (dhania), 1/2 tsp freshly ground black pepper (kalimirch) powder and salt to taste.     1. In a deep bowl put 1 cup rajgira flour (cholai/ramdaana).
    2. Add 1/4 cup boiled , peeled and mashed potatoes.
    3. Add 2 tbsp finely chopped coriander (dhania).
    4. Add 1/4 tsp finely chopped green chillies.
    5. Add 1/2 tsp freshly ground black pepper (kalimirch) powder.
    6. Add salt to taste. We added 1/4 tsp salt.
    7. Gradually add enough water to make a semi-soft dough. We added 4 tablespoons and then added another 1/2 tablespoon water.
    8. Knead into a semi-soft dough.
    9. Divide the dough into 4 equal portions.
    10. Flatten dough and dust with rajgira flour.
    11. Roll out a portion into a circle of 150 mm (6”) diameter, using a little rajgira flour for rolling.

    1. Heat a non-stick tava (griddle).
    2. Place the paratha gently on the tava.  
    3. Cook paratha for 30 to 45 seconds on a medium flame.  
    4. Grease the top of the paratha with oil. 
    5. Flip over. 
    6. Cook the other side the same way and use a spatula to press down to cook paratha evenly. 
    7. Flip and cook till golden brown. Your paratha is ready. 
    8. Place rajgira paratha on a serving plate. 
    9. Serve hot.
