The famous south Indian snack becomes unrecognizable in its new tava-cooked avatar! We have modified the traditional, deep-fried masala vadai recipe by adding iron and folic acid rich dill leaves, and tava-cooking the vadais.
This delicious South Indian chana dal vada made with chana dal is suitable for weight watchers and diabetics too, as it has a low glycemic index. Enjoy it with hot tea, and healthy green chutney.

Ingredients
For Masala Vada
1 cup soaked chana dal (split bengal gram) , refer handy tip
1/4 cup finely chopped onion
1/4 cup finely chopped dill leaves
1 tsp finely chopped green chillies
1 tsp finely chopped garlic (lehsun)
a pinch of sugar
salt to taste
1 1/2 tsp oil for greasing and cooking
For Serving With Masala Vada
Method
- To make masala vada, drain the chana dal and blend in a mixer to a coarse mixture without using water.
- Transfer the mixture into a deep bowl, add all the remaining ingredients and mix well.
- Divide the mixture into 10 equal portions and shape each portion into a 37 mm. (1½") diameter flat round vadai.
- Heat a non-stick tava (griddle) and grease it lightly using 1/2 tsp of oil.
- Cook each vadai, using 1 tsp of oil, till they turn golden brown in colour from both the sides.
- Serve the masala vada immediately with healthy green chutney.
- The chana dal needs to be soaked for 3 hours.

Cover the dal with a lid and soak for 3 hours. You can also use hot water and soak it for 2 hours.

Place the uncooked vadas on the tava.

Cook the vadas for 30 to 45 seconds on medium heat.

Grease the top of the vadas with oil.

Flip over.

Cook the other side the same way. Remember to press down with a spatula to cook the vadas evenly.

Keep cooking and flipping the vadas till golden brown. Your non fried dal vadas are ready.

I love having deep-fried Masala Vadai?..but I tried making this low cal snack recipe and added dill leaves?it really gave that freshness to the vadai?along with some iron which helps to build up hemoglobin levels?
