cooking the carrots

 

    1. Take 500 grams of carrots.
    2. Peel and chop off the ends.
    3. Chop into cubes. This comes out to 3 cups of chopped carrots.
    4. Bring water to boil in a broad pan.
    5. Put the chopped carrots in it.
    6. Boil carrots for 12 to 15 minutes till the carrots are cooked.
    7. Drain the carrots and cool them.

    6. Add 1 tsp sea salt.
    7. Blend till you get a creamy paste. You may need to keep pulsing in small intervals till done.

    2. Prefer maple syrup over honey.
    3. Coconut oil is super healthy and hence used. Also it gives the butter a great taste.
    4. Must use sea salt in the recipe.
    5. This carrot butter does have a short shelf life in the fridge due to the presence of carrots. We expect it to remain good for upto 48 hours. But the best if to freeze the carrot butter in a plastic container for a shelf life of 7 days or longer.
