For bulgur wheat matki pulao
  1. To make bulgur wheat matki pulao heat the oil in a broad non-stick pan and add the cumin seeds.
  2. When they crackle, add the asafoetida, cloves, bay leaf, onions and sauté on a medium flame for 1 minute till the onions turn translucent.
  3. Add the carrots and french beans and sauté on a medium flame for 2 minutes.
  4. Add the bulgur wheat, matki sprouts, turmeric powder, chilli powder, coriander powder and salt and mix well.
  5. Add approx. 2½ cups of water, cook over a medium flame for 10 minutes, stirring occasionally.
  6. Then cover and cook on a slow flame for 2 minutes.
  7. Serve bulgur wheat matki pulao hot with curds.

    5. Add cloves (laung / lavang).
    6. Add bayleaf (tejpatta).
    7. Add 1/4 cup chopped onions.
    8. Sauté on a medium flame for 1 minute till the onions turn translucent.
    9. Add 1/2 cup chopped carrots.
    10. Add 1/2 cup chopped french beans.
    11.   Sauté on a medium flame for 2 minutes.
    12. Add 1/2 cup broken wheat (dalia).
    13. Add 1/2 cup sprouted matki (moath beans).
    14. Add 1/4 tsp turmeric powder (haldi).
    15. Add 1/2 tsp chilli powder.
    16. Add 1 tsp coriander (dhania) powder.
    17. Add salt to taste. We added 1/2 tsp salt.
    18. Mix well.
    19. Add approx. 2½ cups of water.
    20. Cook over a medium flame for 10 minutes, stirring occasionally. 
    21. Cover and cook on slow flame for 2 minutes. This was done to further cook the matki and dalia which were slightly undercooked.
    22. Cooked bulger wheat vegetable pulao.
